Mashed Chestnuts With Butter And Parsley

Ingredients

  • 1 quart large French chestnuts
  • 1 tbsp butter
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 tbsp chopped parsley (optional)
  • stock (optional)
  • bread crumbs (optional)

Method

  1. 1 Shell the chestnuts and boil in hot water until skins soften.
  2. 2 Drain and remove skins from the chestnuts.
  3. 3 Return chestnuts to water and boil until soft.
  4. 4 Press the hot chestnuts through a colander or potato press.
  5. 5 Season mashed chestnuts with butter, salt, and pepper.
  6. 6 Optionally stir in parsley, stock, or bread crumbs.
