Mashed Chestnuts With Butter And Parsley
Ingredients
- 1 quart large French chestnuts
- 1 tbsp butter
- 1 tsp salt
- ¼ tsp pepper
- 1 tbsp chopped parsley (optional)
- stock (optional)
- bread crumbs (optional)
Method
- 1 Shell the chestnuts and boil in hot water until skins soften.
- 2 Drain and remove skins from the chestnuts.
- 3 Return chestnuts to water and boil until soft.
- 4 Press the hot chestnuts through a colander or potato press.
- 5 Season mashed chestnuts with butter, salt, and pepper.
- 6 Optionally stir in parsley, stock, or bread crumbs.
