Marzipan Almond Paste
Ingredients
- 1 lb sweet almonds
- 2 oz bitter almonds
- 1 lb icing sugar
- 1 packet albumen
- 3 tsp cold water
- rose water
Method
- 1 Blanch 1 lb sweet almonds and 2 oz bitter almonds.
- 2 Pound almonds in a mortar, adding a little rose water to prevent oiling, until perfectly smooth.
- 3 Mix the almond paste with an equal weight (1 lb) of icing sugar.
- 4 Dissolve 1 packet of albumen in 3 tsp cold water and moisten the paste.
- 5 Spread evenly on cake and allow to become dry and firm before icing.
