Marzipan Almond Paste

Ingredients

  • 1 lb sweet almonds
  • 2 oz bitter almonds
  • 1 lb icing sugar
  • 1 packet albumen
  • 3 tsp cold water
  • rose water

Method

  1. 1 Blanch 1 lb sweet almonds and 2 oz bitter almonds.
  2. 2 Pound almonds in a mortar, adding a little rose water to prevent oiling, until perfectly smooth.
  3. 3 Mix the almond paste with an equal weight (1 lb) of icing sugar.
  4. 4 Dissolve 1 packet of albumen in 3 tsp cold water and moisten the paste.
  5. 5 Spread evenly on cake and allow to become dry and firm before icing.
