Maryland Beaten Biscuits

Ingredients

  • 4 cups flour
  • 1/2 cup Crisco
  • 1 teaspoon salt
  • Milk and water

Method

  1. 1 Mix and sift flour and salt. Cut in Crisco with a knife or fingertips.
  2. 2 Mix milk and water, chill thoroughly, and add to dry ingredients to make a stiff dough. Keep everything cold.
  3. 3 Beat dough with a rolling pin until it blisters. Roll to 1/3-inch thickness and cut into small biscuits.
  4. 4 Prick centers, refrigerate for one hour, then place on greased tins.
  5. 5 Bake in a 350°F oven for 30 minutes until golden brown. Turn off oven and let rest 10 minutes to dry out.
