Marshmallow Topped Oatmeal Cookies

Ingredients

  • 1 cup syrup
  • 4 tablespoons shortening
  • 1 egg
  • 3 ½ cups oatmeal
  • ¾ cup flour
  • 1 level tablespoon baking powder
  • 1 teaspoon vanilla
  • marshmallow halves (for topping)

Method

  1. 1 In a mixing bowl, combine syrup, shortening, egg, oatmeal, flour, baking powder, and vanilla. Beat just enough to mix.
  2. 2 Form the mixture into round balls and place them three inches apart on a well-greased baking sheet.
  3. 3 Bake in a moderate oven (350°F) for fifteen minutes.
  4. 4 Place one-half teaspoon of marshmallow on each cookie immediately after removing from the oven.
