Marshmallow Topped Oatmeal Cookies
Ingredients
- 1 cup syrup
- 4 tablespoons shortening
- 1 egg
- 3 ½ cups oatmeal
- ¾ cup flour
- 1 level tablespoon baking powder
- 1 teaspoon vanilla
- marshmallow halves (for topping)
Method
- 1 In a mixing bowl, combine syrup, shortening, egg, oatmeal, flour, baking powder, and vanilla. Beat just enough to mix.
- 2 Form the mixture into round balls and place them three inches apart on a well-greased baking sheet.
- 3 Bake in a moderate oven (350°F) for fifteen minutes.
- 4 Place one-half teaspoon of marshmallow on each cookie immediately after removing from the oven.
