Marsala Zabaglione With Cinnamon

Ingredients

  • 3 egg yolks
  • 2 oz granulated sugar
  • 5 tbsp Marsala or sherry wine
  • Dash of cinnamon

Method

  1. 1 Whisk egg yolks and sugar with a ladle until pale and almost white.
  2. 2 Stir in the Marsala or sherry wine.
  3. 3 Place the saucepan in a larger pan of hot water (bain-marie).
  4. 4 Beat continuously until sugar dissolves and the mixture thickens.
  5. 5 Serve immediately, sprinkling with a dash of cinnamon.
