Marsala Zabaglione With Cinnamon
Ingredients
- 3 egg yolks
- 2 oz granulated sugar
- 5 tbsp Marsala or sherry wine
- Dash of cinnamon
Method
- 1 Whisk egg yolks and sugar with a ladle until pale and almost white.
- 2 Stir in the Marsala or sherry wine.
- 3 Place the saucepan in a larger pan of hot water (bain-marie).
- 4 Beat continuously until sugar dissolves and the mixture thickens.
- 5 Serve immediately, sprinkling with a dash of cinnamon.
