Marsala Beef Tenderloin With Ham
Ingredients
- 2 lbs beef tenderloin
- 1 medium onion, thinly sliced
- Slices of ham
- 1 tbsp butter
- Salt and pepper
- 1 tbsp flour
- 1 cup soup stock or water
- 2 tbsp Marsala or Sherry wine
Method
- 1 Roll the tenderloin, tie it securely, and place in a pot with sliced onion, ham, and butter. Season moderately with salt and pepper.
- 2 Brown the meat on all sides until the onion is soft. Sprinkle with flour and cook until lightly colored.
- 3 Add stock or water, bring to a simmer, and cook on low heat until tender.
- 4 Strain the gravy, skim off fat, and return to the pot with Marsala or Sherry. Simmer until sauce reaches desired consistency.
- 5 Slice the meat and serve with the sauce.
