Marsala Beef Tenderloin With Ham

Ingredients

  • 2 lbs beef tenderloin
  • 1 medium onion, thinly sliced
  • Slices of ham
  • 1 tbsp butter
  • Salt and pepper
  • 1 tbsp flour
  • 1 cup soup stock or water
  • 2 tbsp Marsala or Sherry wine

Method

  1. 1 Roll the tenderloin, tie it securely, and place in a pot with sliced onion, ham, and butter. Season moderately with salt and pepper.
  2. 2 Brown the meat on all sides until the onion is soft. Sprinkle with flour and cook until lightly colored.
  3. 3 Add stock or water, bring to a simmer, and cook on low heat until tender.
  4. 4 Strain the gravy, skim off fat, and return to the pot with Marsala or Sherry. Simmer until sauce reaches desired consistency.
  5. 5 Slice the meat and serve with the sauce.
