Marmalade Ginger Pie
Ingredients
- 1/2 cup sugar
- 1/2 cup shortening
- 1 cup marmalade
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 2 cups flour
- 1/2 teaspoon powdered ginger
Method
- 1 Sift salt, flour, and baking powder into a bowl.
- 2 Rub in shortening with your fingertips.
- 3 Add ginger and well-beaten egg; knead lightly into a smooth paste.
- 4 Divide dough into two pieces; roll out one and line a greased pie plate.
- 5 Spread marmalade over the crust, cover with the second piece, and pinch edges.
- 6 Bake in a 350°F oven for 30 minutes.
