Marinated Vegetable And Seafood Salad
Ingredients
- 1 cup carrots, cut into small pieces
- 1 cup potatoes, cut into small pieces
- 1 cup peas
- 1 cup flageolet beans
- 6 tablespoons oil
- 3 tablespoons vinegar
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 head lettuce
- 1 cup mayonnaise
- 1 cup shrimps
- ¼ lb smoked salmon, cut into small pieces
- 1 hard-boiled egg, separated
Method
- 1 Marinate the carrots, potatoes, peas, and beans with a mixture of oil, vinegar, salt, and pepper.
- 2 Line a serving dish with lettuce leaves to create four distinct sections.
- 3 Place the marinated vegetables into the four sections and cover each with mayonnaise.
- 4 Sprinkle smoked salmon over two sections, the sifted egg yolk over one, and the chopped egg white over the fourth.
- 5 Press the ends of the shrimps into the mayonnaise to outline the inner side of each section.
- 6 Garnish the center of the dish with a tuft of lettuce.
