Marinated Tomato Salad With Tarragon Vinaigrette

Ingredients

  • 4-5 large red tomatoes
  • 4-5 large golden tomatoes
  • 4-5 slices raw onion (or shallots)
  • Salt
  • 1/8 tsp sugar
  • 1 tsp tarragon vinegar
  • 2 tsp oil
  • Mustard
  • Pepper
  • 1 tbsp chopped chervil
  • Chopped chives (optional)

Method

  1. 1 Plunge tomatoes in boiling water for a moment, then carefully peel off the skins.
  2. 2 Line a dish with onion slices, arrange tomato slices on top, and sprinkle with salt and sugar.
  3. 3 Let sit for 4 hours, then remove and discard the onions.
  4. 4 Whisk vinegar, oil, mustard, pepper, and chervil in a cup to make a dressing.
  5. 5 Pour dressing over tomatoes and let sit for at least 1 hour before serving.
