Marinated Tomato Salad With Tarragon Vinaigrette
Ingredients
- 4-5 large red tomatoes
- 4-5 large golden tomatoes
- 4-5 slices raw onion (or shallots)
- Salt
- 1/8 tsp sugar
- 1 tsp tarragon vinegar
- 2 tsp oil
- Mustard
- Pepper
- 1 tbsp chopped chervil
- Chopped chives (optional)
Method
- 1 Plunge tomatoes in boiling water for a moment, then carefully peel off the skins.
- 2 Line a dish with onion slices, arrange tomato slices on top, and sprinkle with salt and sugar.
- 3 Let sit for 4 hours, then remove and discard the onions.
- 4 Whisk vinegar, oil, mustard, pepper, and chervil in a cup to make a dressing.
- 5 Pour dressing over tomatoes and let sit for at least 1 hour before serving.
