Marinated Pot Roast With Bacon And Spices

Ingredients

  • 2-inch thick piece of chuck, pot roast, or tender boiling beef
  • Solution of half vinegar and half water (enough to cover meat)
  • 2 large onions, sliced
  • 3-4 slices bacon, cut into 1-inch pieces
  • 1 tablespoon chopped onion (from the soaking solution)
  • 1 tablespoon whole cloves
  • 1 teaspoon whole allspice
  • Sugar to taste (for gravy)

Method

  1. 1 Place beef in a dish and cover with vinegar-water solution. Add sliced onions. Marinate for 2-3 days.
  2. 2 Day before cooking, cut bacon into 1-inch pieces. Chop 1 tablespoon of the soaked onion finely.
  3. 3 Cut holes in the meat 1-2 inches apart. Stuff holes with bacon bits and chopped onion.
  4. 4 Return meat to solution. Add cloves and allspice. Bake as a pot roast in part of the solution until tender.
  5. 5 Use remaining solution to make gravy, adding sugar to taste until dark.
