Marinated Chicken And Cucumber Salad
Ingredients
- 1 cucumber, thinly sliced
- 1 bunch round radishes, thinly sliced
- 2/3 cup shredded celery
- 4 tbsp oil
- 2 tbsp vinegar or lemon juice
- 1/2 tsp salt
- dash paprika
- shredded lettuce or lettuce hearts
- 3 cups cooked chicken, cut into cubes
- 4 tbsp oil (for marinade)
- 2 tbsp lemon juice or vinegar (for marinade)
- 1/2 tsp salt (for marinade)
- dash white pepper (for marinade)
- mayonnaise
- celery sticks, curled
- egg yolk, hard-boiled and chopped
- sliced radishes (optional garnish)
Method
- 1 Marinate the cubed chicken with 4 tbsp oil, 2 tbsp lemon juice or vinegar, 1/2 tsp salt, and a dash of white pepper. Let sit for at least one hour.
- 2 In a bowl, combine sliced cucumber, radishes, and 2/3 cup shredded celery. Season with 4 tbsp oil, 2 tbsp vinegar or lemon juice, 1/2 tsp salt, and a dash of paprika. Toss to coat.
- 3 Line a serving platter with shredded lettuce or lettuce hearts. Arrange the dressed cucumber and radish mixture on the bed.
- 4 Top the vegetable bed with the marinated chicken cubes. Cover the entire salad with a layer of mayonnaise.
- 5 Garnish with curled celery sticks topped with a bit of chopped egg yolk, or overlap sliced radishes. Finish with a tuft of lettuce or curled celery.
