Marbled Chocolate Fudge

Ingredients

  • 2 cups granulated sugar
  • ¼ cup glucose (pure corn syrup)
  • 1 ½ cups cream
  • 1 tablespoon butter
  • 2 squares Baker's Chocolate, scraped fine or melted
  • 2 teaspoonfuls vanilla

Method

  1. 1 Stir sugar, glucose, and cream over low heat until sugar melts. Move to hotter heat and stir until boiling.
  2. 2 Boil gently, stirring every 3-4 minutes, until thermometer reaches 236°F or a soft ball forms in cold water.
  3. 3 Remove from heat. Pour half the mixture over the chocolate. Place both dishes on a rack to cool slightly.
  4. 4 Beat one dish of the fudge. Add 1 teaspoon vanilla to each dish. Beat both until thick and slightly grainy.
  5. 5 Layer the mixtures in a waxed-paper-lined pan to create a marbled effect. Cool, remove from pan, and cut into cubes.
