Marbled Chocolate Fudge
Ingredients
- 2 cups granulated sugar
- ¼ cup glucose (pure corn syrup)
- 1 ½ cups cream
- 1 tablespoon butter
- 2 squares Baker's Chocolate, scraped fine or melted
- 2 teaspoonfuls vanilla
Method
- 1 Stir sugar, glucose, and cream over low heat until sugar melts. Move to hotter heat and stir until boiling.
- 2 Boil gently, stirring every 3-4 minutes, until thermometer reaches 236°F or a soft ball forms in cold water.
- 3 Remove from heat. Pour half the mixture over the chocolate. Place both dishes on a rack to cool slightly.
- 4 Beat one dish of the fudge. Add 1 teaspoon vanilla to each dish. Beat both until thick and slightly grainy.
- 5 Layer the mixtures in a waxed-paper-lined pan to create a marbled effect. Cool, remove from pan, and cut into cubes.
