Maple Syrup Mousse
Ingredients
- 3/4 cup maple syrup
- 4 egg yolks
- 1 pint heavy cream
Method
- 1 Beat egg yolks until light and fluffy.
- 2 Cook yolks and maple syrup in a double boiler for 15 minutes, stirring rapidly.
- 3 Remove from heat and stir until completely cold.
- 4 Fold in the whipped cream.
- 5 Transfer to a mold and pack in ice for 4 to 5 hours to set.
