Maple Syrup Mousse

Ingredients

  • 3/4 cup maple syrup
  • 4 egg yolks
  • 1 pint heavy cream

Method

  1. 1 Beat egg yolks until light and fluffy.
  2. 2 Cook yolks and maple syrup in a double boiler for 15 minutes, stirring rapidly.
  3. 3 Remove from heat and stir until completely cold.
  4. 4 Fold in the whipped cream.
  5. 5 Transfer to a mold and pack in ice for 4 to 5 hours to set.
