Maple Fig And Apricot Fudge

Ingredients

  • 1 ½ cups granulated sugar
  • 1 cup maple syrup
  • 1 ½ cups pure corn syrup
  • ½ cup thick cream
  • ¾ cup fruit (figs, candied cherries, and apricots), cut into small pieces
  • 1/3 cup milk
  • 1/4 cup butter
  • ½ cake Baker's Dot Chocolate or more

Method

  1. 1 Stir sugar, syrup, glucose, and cream in a saucepan over heat until sugar is melted.
  2. 2 Cover and boil for 3-4 minutes, then uncover and boil gently, stirring often, until mixture forms a soft ball in cold water or reaches 236°F.
  3. 3 Set the saucepan on a cake cooler to cool slightly, then add the fruit and beat until the mixture thickens.
  4. 4 Turn the mixture into pans lined with waxed paper and let set for about 15 minutes.
  5. 5 Cut into squares and coat each piece with melted chocolate.
