Mango Strawberry Feta Toast Points
Ingredients
- 2 cups ripe mango, divided
- 1/2 cup strawberries, divided
- 2 tablespoons fat-free feta cheese crumbles
- 1/4 cup balsamic vinegar
- 2 tablespoons fresh basil leaves, divided
- 4 tablespoons olive oil
- 4 slices whole wheat bread
Method
- 1 Peel and pit the mango. Dice 3/4 of the mango and 3/4 of the strawberries; place them in a large bowl with the feta cheese.
- 2 Combine the remaining fruit, 1/4 cup basil, balsamic vinegar, and olive oil in a blender. Blend until smooth to create a vinaigrette.
- 3 Pour the blended vinaigrette over the fruit-feta mixture and toss gently to coat. Chop the remaining basil leaves.
- 4 Toast the bread slices and cut each slice diagonally into triangles. Top the toast points with the dressed fruit-feta mixture and chopped basil.
