Mango Chicken Wraps With Peanut Sauce
Ingredients
- 1 1/2 cups ripe mangos, peeled, pitted, and diced
- 2 cups chopped roasted chicken breast
- 2 tablespoons sliced green onions
- 1/2 cup chopped fresh basil
- 1 1/2 cups chopped red bell pepper
- 2 cups shredded Savoy or Napa cabbage
- 1/3 cup grated medium carrots
- 3 tablespoons fat-free cream cheese
- 2 teaspoons natural creamy unsalted peanut butter
- 4 teaspoons low-sodium soy sauce
- 4 whole-wheat tortillas (8-inch)
Method
- 1 In a large bowl, combine diced mangos, chopped chicken, green onions, basil, red bell pepper, cabbage, and carrots. Toss to mix.
- 2 In a small bowl, whisk together cream cheese, peanut butter, and soy sauce until smooth.
- 3 Lay tortillas flat. Spread 1/4 of the sauce mixture onto each tortilla.
- 4 Top each tortilla with the mango-chicken mixture. Roll up tightly, tucking in the ends.
- 5 Secure wraps with toothpicks. Cut in half and serve immediately or refrigerate.
