Mango Chicken Wraps With Peanut Sauce

  • 1 1/2 cups ripe mangos, peeled, pitted, and diced
  • 2 cups chopped roasted chicken breast
  • 2 tablespoons sliced green onions
  • 1/2 cup chopped fresh basil
  • 1 1/2 cups chopped red bell pepper
  • 2 cups shredded Savoy or Napa cabbage
  • 1/3 cup grated medium carrots
  • 3 tablespoons fat-free cream cheese
  • 2 teaspoons natural creamy unsalted peanut butter
  • 4 teaspoons low-sodium soy sauce
  • 4 whole-wheat tortillas (8-inch)

Method

  1. 1 In a large bowl, combine diced mangos, chopped chicken, green onions, basil, red bell pepper, cabbage, and carrots. Toss to mix.
  2. 2 In a small bowl, whisk together cream cheese, peanut butter, and soy sauce until smooth.
  3. 3 Lay tortillas flat. Spread 1/4 of the sauce mixture onto each tortilla.
  4. 4 Top each tortilla with the mango-chicken mixture. Roll up tightly, tucking in the ends.
