Mackerel And Egg Salad

Ingredients

  • 1 cooked mackerel or bluefish, flaked
  • 3 hard-boiled eggs, whites chopped and yolks sifted
  • French dressing
  • Lettuce or cress for bed
  • Small gherkins, cut into fans (optional)
  • Pickled beet, cut in fanciful shapes (optional)

Method

  1. 1 Separate the cooked fish into flakes.
  2. 2 Mix the fish flakes with chopped egg whites and sifted egg yolks.
  3. 3 Season the mixture with French dressing and mix lightly.
  4. 4 Turn the salad onto a bed of lettuce or cress seasoned with dressing.
  5. 5 Garnish with gherkin fans or pickled beet shapes.
