Mackerel And Egg Salad
Ingredients
- 1 cooked mackerel or bluefish, flaked
- 3 hard-boiled eggs, whites chopped and yolks sifted
- French dressing
- Lettuce or cress for bed
- Small gherkins, cut into fans (optional)
- Pickled beet, cut in fanciful shapes (optional)
Method
- 1 Separate the cooked fish into flakes.
- 2 Mix the fish flakes with chopped egg whites and sifted egg yolks.
- 3 Season the mixture with French dressing and mix lightly.
- 4 Turn the salad onto a bed of lettuce or cress seasoned with dressing.
- 5 Garnish with gherkin fans or pickled beet shapes.
