Mace Prune Layer Cake With Lemon Glaze
Ingredients
- 1 cup sugar
- 6 tablespoons shortening
- 2 egg yolks
- 1 cup water
- 2 ¾ cups flour
- 2 level tablespoons baking powder
- 1 level tablespoon mace
- 2 egg whites
- finely chopped nuts
- well-drained and cooked prunes, chopped fine
- sugar for dusting
- ¾ cup powdered sugar
- 1 tablespoon lemon juice
- boiling water
Method
- 1 Preheat oven to 350°F. Cream 1 cup sugar and 6 tablespoons shortening until light and creamy.
- 2 Add 2 egg yolks, 1 cup water, 2 ¾ cups flour, 2 level tablespoons baking powder, and 1 level tablespoon mace. Beat to blend.
- 3 Fold in stiffly beaten whites of 2 eggs.
- 4 Line a cake pan with greased paper. Pour in a layer of batter, spread evenly, then add a layer of chopped nuts and a layer of chopped prunes.
- 5 Repeat layers until pan is three-quarters full. Dust top lightly with sugar.
- 6 Bake for one hour. Cool, then ice with a mixture of ¾ cup powdered sugar, 1 tablespoon lemon juice, and sufficient boiling water to moisten.
