Mace Prune Layer Cake With Lemon Glaze

Ingredients

  • 1 cup sugar
  • 6 tablespoons shortening
  • 2 egg yolks
  • 1 cup water
  • 2 ¾ cups flour
  • 2 level tablespoons baking powder
  • 1 level tablespoon mace
  • 2 egg whites
  • finely chopped nuts
  • well-drained and cooked prunes, chopped fine
  • sugar for dusting
  • ¾ cup powdered sugar
  • 1 tablespoon lemon juice
  • boiling water

Method

  1. 1 Preheat oven to 350°F. Cream 1 cup sugar and 6 tablespoons shortening until light and creamy.
  2. 2 Add 2 egg yolks, 1 cup water, 2 ¾ cups flour, 2 level tablespoons baking powder, and 1 level tablespoon mace. Beat to blend.
  3. 3 Fold in stiffly beaten whites of 2 eggs.
  4. 4 Line a cake pan with greased paper. Pour in a layer of batter, spread evenly, then add a layer of chopped nuts and a layer of chopped prunes.
  5. 5 Repeat layers until pan is three-quarters full. Dust top lightly with sugar.
  6. 6 Bake for one hour. Cool, then ice with a mixture of ¾ cup powdered sugar, 1 tablespoon lemon juice, and sufficient boiling water to moisten.
