Ingredients

  • 1 pint milk
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 1 head celery
  • 1 large slice onion
  • 1 small piece mace
  • salt to taste

Method

  1. 1 Boil celery in 1 pint of water for 30 to 45 minutes.
  2. 2 Boil the onion, mace, and milk together.
  3. 3 Mix flour with 2 tablespoons of cold milk to create a slurry.
  4. 4 Mash the cooked celery in its cooking water and stir in the boiling milk mixture.
  5. 5 Strain the soup and serve.
