Macaroon And Ratafia Pudding

Ingredients

  • 1 cup heavy cream
  • 1 cup milk
  • 1 tbsp cornstarch
  • 1/4 lb macaroons
  • 2 oz ratafia biscuits
  • 1 piece vanilla bean, 2 inches long
  • sugar to taste

Method

  1. 1 Combine cream, milk, vanilla bean, and sugar in a saucepan over medium heat.
  2. 2 Whisk cornstarch with 1 tbsp cold milk until smooth, then stir into the warm dairy mixture.
  3. 3 Stir constantly over heat until thickened, then simmer for 2 minutes more.
  4. 4 Remove vanilla bean and let cream cool slightly.
  5. 5 Arrange macaroons and ratafias in a shallow glass dish, pour cream over top, and serve cold.
