Macaroon And Ratafia Pudding
Ingredients
- 1 cup heavy cream
- 1 cup milk
- 1 tbsp cornstarch
- 1/4 lb macaroons
- 2 oz ratafia biscuits
- 1 piece vanilla bean, 2 inches long
- sugar to taste
Method
- 1 Combine cream, milk, vanilla bean, and sugar in a saucepan over medium heat.
- 2 Whisk cornstarch with 1 tbsp cold milk until smooth, then stir into the warm dairy mixture.
- 3 Stir constantly over heat until thickened, then simmer for 2 minutes more.
- 4 Remove vanilla bean and let cream cool slightly.
- 5 Arrange macaroons and ratafias in a shallow glass dish, pour cream over top, and serve cold.
