Ingredients

  • carrot, diced
  • turnip, diced
  • green peas
  • flageolet beans
  • string beans, cut into 1/2-inch lengths
  • cauliflower, small pieces
  • butter
  • pepper
  • salt
  • Béchamel sauce or cream sauce (optional)

Method

  1. 1 Dice carrot and turnip into 1/2-inch cubes or cut into fancy shapes. Prepare peas, flageolet beans, string beans (cut into 1/2-inch lengths), and small cauliflower pieces.
  2. 2 Boil each vegetable type separately until tender. Drain them well to remove excess moisture.
  3. 3 Combine the drained vegetables in a bowl. Season with butter, salt, and pepper, or toss lightly with Béchamel or cream sauce.
  4. 4 Serve as a garnish for meat, in a vegetable dish, or as a salad. For presentation, arrange vegetables in separate piles around the main dish.
