Macédoine Of Mixed Vegetables
Ingredients
- carrot, diced
- turnip, diced
- green peas
- flageolet beans
- string beans, cut into 1/2-inch lengths
- cauliflower, small pieces
- butter
- pepper
- salt
- Béchamel sauce or cream sauce (optional)
Method
- 1 Dice carrot and turnip into 1/2-inch cubes or cut into fancy shapes. Prepare peas, flageolet beans, string beans (cut into 1/2-inch lengths), and small cauliflower pieces.
- 2 Boil each vegetable type separately until tender. Drain them well to remove excess moisture.
- 3 Combine the drained vegetables in a bowl. Season with butter, salt, and pepper, or toss lightly with Béchamel or cream sauce.
- 4 Serve as a garnish for meat, in a vegetable dish, or as a salad. For presentation, arrange vegetables in separate piles around the main dish.
