Lyonnaise Potatoes With Onions
Ingredients
- 2 cups cold boiled potatoes, sliced
- 2 ½ tbsp butter
- 1 tbsp finely chopped onion
- 1 tbsp finely chopped parsley
- Salt and pepper to taste
Method
- 1 In a skillet, cook the chopped onion in 1 ½ tablespoons of butter for 5 minutes.
- 2 Melt the remaining 1 tablespoon of butter in a separate pan. Season with salt and pepper, then add the sliced potatoes.
- 3 Cook the potatoes, shaking the pan occasionally, until they have absorbed the butter.
- 4 Stir in the cooked onion and butter mixture, then add the chopped parsley and mix well.
