Lyonnaise Potatoes With Onions

Ingredients

  • 2 cups cold boiled potatoes, sliced
  • 2 ½ tbsp butter
  • 1 tbsp finely chopped onion
  • 1 tbsp finely chopped parsley
  • Salt and pepper to taste

Method

  1. 1 In a skillet, cook the chopped onion in 1 ½ tablespoons of butter for 5 minutes.
  2. 2 Melt the remaining 1 tablespoon of butter in a separate pan. Season with salt and pepper, then add the sliced potatoes.
  3. 3 Cook the potatoes, shaking the pan occasionally, until they have absorbed the butter.
  4. 4 Stir in the cooked onion and butter mixture, then add the chopped parsley and mix well.
