Lyonnaise Potatoes With Caramelized Onions

Ingredients

  • butter
  • 1 onion, thinly sliced
  • cold boiled potatoes, sliced
  • minced parsley

Method

  1. 1 Fry thinly sliced onions in plenty of butter until a delicate brown.
  2. 2 Add sliced cold boiled potatoes. Toss gently to mix with onions, avoiding stirring to prevent breaking the potatoes.
  3. 3 Cook until golden brown, then drain.
  4. 4 Transfer to a dish and sprinkle with minced parsley before serving.
