Lyonnaise Potatoes With Caramelized Onions
Ingredients
- butter
- 1 onion, thinly sliced
- cold boiled potatoes, sliced
- minced parsley
Method
- 1 Fry thinly sliced onions in plenty of butter until a delicate brown.
- 2 Add sliced cold boiled potatoes. Toss gently to mix with onions, avoiding stirring to prevent breaking the potatoes.
- 3 Cook until golden brown, then drain.
- 4 Transfer to a dish and sprinkle with minced parsley before serving.
