Lowfat Cheddar Macaroni Casserole
Ingredients
- 1/2 cup macaroni
- 1/2 cup chopped onion
- 1 cup evaporated milk, non-fat
- 1 large egg, beaten
- 1 1/4 cups finely shredded sharp cheddar cheese, lowfat
- Black pepper to taste
- Nonstick cooking oil spray
Method
- 1 Cook macaroni according to package directions without salt. Drain and set aside.
- 2 Preheat oven to 350°F. Spray a casserole dish with nonstick cooking oil spray.
- 3 Lightly spray a saucepan with oil. Sauté chopped onions for about 3 minutes until softened.
- 4 In a bowl, combine macaroni, onions, evaporated milk, beaten egg, cheese, and pepper. Mix thoroughly.
- 5 Transfer mixture to the prepared casserole dish. Bake for 25 minutes or until bubbly.
- 6 Let stand for 10 minutes before serving.
