Lowfat Cheddar Macaroni Casserole

Ingredients

  • 1/2 cup macaroni
  • 1/2 cup chopped onion
  • 1 cup evaporated milk, non-fat
  • 1 large egg, beaten
  • 1 1/4 cups finely shredded sharp cheddar cheese, lowfat
  • Black pepper to taste
  • Nonstick cooking oil spray

Method

  1. 1 Cook macaroni according to package directions without salt. Drain and set aside.
  2. 2 Preheat oven to 350°F. Spray a casserole dish with nonstick cooking oil spray.
  3. 3 Lightly spray a saucepan with oil. Sauté chopped onions for about 3 minutes until softened.
  4. 4 In a bowl, combine macaroni, onions, evaporated milk, beaten egg, cheese, and pepper. Mix thoroughly.
  5. 5 Transfer mixture to the prepared casserole dish. Bake for 25 minutes or until bubbly.
  6. 6 Let stand for 10 minutes before serving.
