  • 2 pounds potatoes (6 medium)
  • 1 cup low-fat milk
  • 3 tablespoons margarine or butter
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper

Method

  1. 1 Peel the potatoes and cut them into chunks.
  2. 2 Place potatoes in a medium saucepan with enough water to cover them.
  3. 3 Cook on medium heat for 15 minutes or until tender.
  4. 4 Remove from heat and drain the water completely.
  5. 5 Mash the potatoes with a fork or potato masher.
  6. 6 Stir in milk until smooth and creamy.
  7. 7 Add butter, salt, and pepper to taste.
