Long-Beaten Whole Egg Sponge

Ingredients

  • 4 oz all-purpose flour
  • 5 large eggs
  • 4 oz granulated sugar

Method

  1. 1 Preheat oven to 350°F. Grease a cake pan and dust with sugar.
  2. 2 Beat eggs and sugar for 20 minutes until thick and light, optionally over a warm water bath.
  3. 3 Sift flour and gently fold it into the egg mixture.
  4. 4 Pour into the pan and bake for 1 hour until golden and set.
