Lobster Salad With Mayonnaise And Egg
Ingredients
- lobster meat
- French dressing
- lettuce leaves
- mayonnaise dressing
- dried coral (lobster roe)
- hard-boiled egg yolk or white
Method
- 1 Dice lobster meat and marinate with French dressing. Keep on ice until ready to serve, then drain carefully.
- 2 Form cups from the inner leaves of lettuce. Place a spoonful of lobster meat in the center of each cup.
- 3 Pipe mayonnaise through a pastry bag with a star tip onto the lobster in each nest. Alternatively, arrange lobster in a mound on lettuce and mask with mayonnaise.
- 4 Garnish the center with a bouquet of heart lettuce leaves. Sift dried coral in a circle around it, followed by alternating circles of sifted egg yolk or chopped egg white.
- 5 Finish the dish with lobster fans, feelers, or tail pieces. Optionally, garnish with stars of mayonnaise.
