Lobster Or Crab Risotto
Ingredients
- 1 lb rice
- ½ lb lobster or crab meat
- 1 sprig parsley, chopped fine
- 1 stalk celery, chopped fine
- 1 carrot, chopped fine
- ½ onion, chopped fine
- 1 clove garlic, chopped fine
- Olive oil
- Salt and pepper
- Hot water or broth
- Butter
- Grated cheese
Method
- 1 Chop parsley, celery, carrot, onion, and garlic. Brown them in olive oil.
- 2 Add crab or lobster meat, season with salt and pepper, and cook until red.
- 3 Add enough hot water to cover, then remove the meat, leaving the liquid to simmer.
- 4 Reserve half the meat. Sieve the rest and return to the liquid. Melt butter in another pan.
- 5 Add washed, dried rice to the butter. Stir, then gradually add the strained broth.
- 6 When rice is almost cooked, stir in reserved meat and grated cheese. Remove from heat.
