Lobster Coral Salad With Butter Sauce

Ingredients

  • 1 boiled lobster, meat picked and cut into small pieces
  • lobster coral
  • lobster liver
  • 2 tablespoons vinegar or 3 tablespoons lemon juice
  • 1/3 cup butter
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon prepared mustard
  • lettuce leaves, cup-shaped
  • 1 hard-boiled egg, quartered

Method

  1. 1 Pick the lobster meat and cut into small pieces. Sift the coral over the meat and mix in the liver.
  2. 2 Add vinegar (or lemon juice), butter, cayenne, and mustard to the lobster mixture.
  3. 3 Heat the mixture in a blazer or saucepan until thoroughly hot.
  4. 4 Serve on cup-shaped lettuce leaves, topping each portion with a quarter of a hard-boiled egg.
