Lobster Coral Salad With Butter Sauce
Ingredients
- 1 boiled lobster, meat picked and cut into small pieces
- lobster coral
- lobster liver
- 2 tablespoons vinegar or 3 tablespoons lemon juice
- 1/3 cup butter
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon prepared mustard
- lettuce leaves, cup-shaped
- 1 hard-boiled egg, quartered
Method
- 1 Pick the lobster meat and cut into small pieces. Sift the coral over the meat and mix in the liver.
- 2 Add vinegar (or lemon juice), butter, cayenne, and mustard to the lobster mixture.
- 3 Heat the mixture in a blazer or saucepan until thoroughly hot.
- 4 Serve on cup-shaped lettuce leaves, topping each portion with a quarter of a hard-boiled egg.
