Lobster Bisque Served Over Whole Lobster

  • 1 tbsp butter
  • 1 tsp chopped onion
  • 1 tbsp flour
  • 1 cup lobster boiling water
  • 1 cup milk
  • 1 cup good stock
  • lobster meat
  • salt
  • pepper
  • cayenne
  • triangular croûtons
  • lobster head and small claws

Method

  1. 1 Melt butter in a saucepan and cook chopped onion until soft but not browned.
  2. 2 Stir in flour and cook briefly without browning to make a roux.
  3. 3 Slowly whisk in lobster boiling water, milk, and stock, stirring constantly.
  4. 4 Add lobster meat and heat through until thoroughly hot.
  5. 5 Remove lobster meat, arrange on a serving dish in the shape of a lobster, and slice the tail piece.
  6. 6 Season the sauce with salt, pepper, and cayenne, then pour over the lobster. Garnish with croûtons, head, and claws.
