Lobster Bisque Served Over Whole Lobster
Ingredients
- 1 tbsp butter
- 1 tsp chopped onion
- 1 tbsp flour
- 1 cup lobster boiling water
- 1 cup milk
- 1 cup good stock
- lobster meat
- salt
- pepper
- cayenne
- triangular croûtons
- lobster head and small claws
Method
- 1 Melt butter in a saucepan and cook chopped onion until soft but not browned.
- 2 Stir in flour and cook briefly without browning to make a roux.
- 3 Slowly whisk in lobster boiling water, milk, and stock, stirring constantly.
- 4 Add lobster meat and heat through until thoroughly hot.
- 5 Remove lobster meat, arrange on a serving dish in the shape of a lobster, and slice the tail piece.
- 6 Season the sauce with salt, pepper, and cayenne, then pour over the lobster. Garnish with croûtons, head, and claws.
