Loaded Broccoli Cheese Baked Potatoes
Ingredients
- 3 medium potatoes
- 1/4 cup broccoli stalks
- 1 cup 1% milk
- 3/4 cup low-fat shredded cheddar cheese
- 1/4 cup low-fat shredded cheddar cheese
- salt and pepper to taste
Method
- 1 Preheat oven to 350°F. Scrub potatoes and prick skin with a fork.
- 2 Bake potatoes at 350°F for 30-60 minutes until soft.
- 3 Steam broccoli until tender, chop, and peel stems.
- 4 Slice potatoes in half and scoop insides into a bowl with broccoli.
- 5 Add milk, 3/4 cup cheese, salt, and pepper; mash until pale green with flecks.
- 6 Fill skins with mixture, top with remaining cheese, and microwave to heat through.
