Light And Fluffy Fritter Batter
Ingredients
- 2 eggs, separated
- 1 tablespoon oil
- 1 cup flour
- 1/2 cup cold water
- 1/8 teaspoon salt
- 1 teaspoon sugar (optional, for sweet fritters)
- 1 tablespoon brandy (optional, for sweet fritters)
- 1 tablespoon lemon juice or vinegar (optional, for seafood fritters)
- Salt and pepper to taste (optional, for seafood fritters)
- Clam or oyster liquor (optional, substitute for water)
Method
- 1 Stir salt into egg yolks in a bowl.
- 2 Slowly add oil, then brandy and sugar (if using sweet batter).
- 3 Whisk in flour and water a little at a time until smooth.
- 4 Let batter rest for at least two hours.
- 5 Stiffly beat egg whites and fold them into the batter just before use.
