Light And Fluffy Fritter Batter

Ingredients

  • 2 eggs, separated
  • 1 tablespoon oil
  • 1 cup flour
  • 1/2 cup cold water
  • 1/8 teaspoon salt
  • 1 teaspoon sugar (optional, for sweet fritters)
  • 1 tablespoon brandy (optional, for sweet fritters)
  • 1 tablespoon lemon juice or vinegar (optional, for seafood fritters)
  • Salt and pepper to taste (optional, for seafood fritters)
  • Clam or oyster liquor (optional, substitute for water)

Method

  1. 1 Stir salt into egg yolks in a bowl.
  2. 2 Slowly add oil, then brandy and sugar (if using sweet batter).
  3. 3 Whisk in flour and water a little at a time until smooth.
  4. 4 Let batter rest for at least two hours.
  5. 5 Stiffly beat egg whites and fold them into the batter just before use.
