Lentil Potato And Pea Salad
Ingredients
- 1 cup lentils, washed
- 2 cups water
- 1 can (15 ounces) potatoes, sliced
- 1 cup frozen peas
- 1 large carrot, shredded
- 2 tablespoons parsley
- 2 tablespoons red wine vinegar
- 3 teaspoons mustard
- 1/4 cup olive oil
Method
- 1 Boil 1 cup water in a saucepan. Add lentils and cook over low heat for 20 minutes until tender, then drain.
- 2 Cook frozen peas in a separate saucepan for 3 minutes, then remove from heat and rinse and drain.
- 3 Wash, peel, and shred the carrot.
- 4 In a large bowl, combine the cooked lentils, sliced potatoes, peas, and shredded carrot.
- 5 In a separate bowl, whisk together parsley, red wine vinegar, mustard, and olive oil to make the dressing.
- 6 Pour the dressing over the salad ingredients and toss to coat well.
