Lentil Potato And Pea Salad

Ingredients

  • 1 cup lentils, washed
  • 2 cups water
  • 1 can (15 ounces) potatoes, sliced
  • 1 cup frozen peas
  • 1 large carrot, shredded
  • 2 tablespoons parsley
  • 2 tablespoons red wine vinegar
  • 3 teaspoons mustard
  • 1/4 cup olive oil

Method

  1. 1 Boil 1 cup water in a saucepan. Add lentils and cook over low heat for 20 minutes until tender, then drain.
  2. 2 Cook frozen peas in a separate saucepan for 3 minutes, then remove from heat and rinse and drain.
  3. 3 Wash, peel, and shred the carrot.
  4. 4 In a large bowl, combine the cooked lentils, sliced potatoes, peas, and shredded carrot.
  5. 5 In a separate bowl, whisk together parsley, red wine vinegar, mustard, and olive oil to make the dressing.
  6. 6 Pour the dressing over the salad ingredients and toss to coat well.
