Lentil Carrot Cheese Burgers

Ingredients

  • 1 1/4 cups dry lentils
  • 3 cups water
  • 1 cup chopped onion
  • 1 cup grated carrot
  • 3 cups bread crumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 3 tablespoons margarine or butter
  • 4 ounces cheddar cheese, sliced

Method

  1. 1 Rinse lentils in a colander. In a saucepan, bring water to a boil, add lentils, reduce heat, cover, and cook for 15 minutes.
  2. 2 Add onion and carrots to the lentils. Cook for 15 more minutes until tender. Remove from heat and let cool slightly.
  3. 3 Stir in bread crumbs, egg, garlic powder, oregano, and salt until well combined.
  4. 4 Melt margarine or butter in a large skillet over medium heat. Drop mixture by 1/2 cupfuls into the skillet.
  5. 5 Flatten into patties and cook until firm and golden brown on both sides. Top with cheese slices and serve immediately.
