Lentil Carrot Cheese Burgers
Ingredients
- 1 1/4 cups dry lentils
- 3 cups water
- 1 cup chopped onion
- 1 cup grated carrot
- 3 cups bread crumbs
- 1 egg
- 1 teaspoon garlic powder
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 3 tablespoons margarine or butter
- 4 ounces cheddar cheese, sliced
Method
- 1 Rinse lentils in a colander. In a saucepan, bring water to a boil, add lentils, reduce heat, cover, and cook for 15 minutes.
- 2 Add onion and carrots to the lentils. Cook for 15 more minutes until tender. Remove from heat and let cool slightly.
- 3 Stir in bread crumbs, egg, garlic powder, oregano, and salt until well combined.
- 4 Melt margarine or butter in a large skillet over medium heat. Drop mixture by 1/2 cupfuls into the skillet.
- 5 Flatten into patties and cook until firm and golden brown on both sides. Top with cheese slices and serve immediately.
