Lentil Barley Vegetable Soup
Ingredients
- 4 cups dried lentils, rinsed
- 5 scallions
- 2 carrots, chopped
- 1/2 teaspoon dried oregano
- 12 cups pearl barley
- 1 can (14.5 ounce) low-sodium whole peeled tomatoes, coarsely chopped
- 1 tablespoon red wine vinegar
- 1/2 teaspoon salt
- Water (enough to cover ingredients)
Method
- 1 Place a large soup pot on the stove and add lentils, scallions, carrots, celery, oregano, barley, and water.
- 2 Bring to a boil, then reduce heat to low and simmer uncovered for one hour.
- 3 Add the chopped tomatoes and continue cooking for about 45 minutes.
- 4 Just before serving, stir in the red wine vinegar and salt.
