Lentil And Tomato Soup

Ingredients

  • 1 cup dry lentils
  • 5 cups water
  • 2 tablespoons vegetable oil
  • 1 tablespoon finely chopped onion
  • 1 cup canned tomato sauce
  • 1/2 teaspoon garlic powder (or 1 garlic clove)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 chopped celery stalk
  • 2 tablespoons vinegar

Method

  1. 1 Sort lentils to remove debris.
  2. 2 Place lentils in a deep pot with water. Bring to a boil and add all ingredients except vinegar.
  3. 3 Reduce heat, cover, and cook slowly for 1 hour, adding more water if necessary.
  4. 4 Stir in vinegar and remove the bay leaf and garlic before serving.
