Lentil And Egg Frittata
Ingredients
- 1 ¾ cup boiled lentils
- 3 eggs, well-beaten
- salt and pepper to taste
- 2 tbsp water
- boiling butter for frying
Method
- 1 Beat the eggs well and add 2 tablespoons of water.
- 2 Season with salt and pepper to taste.
- 3 Mix the cold boiled lentils into the egg mixture until smooth.
- 4 Fry the mixture in boiling butter as you would a standard omelet.
