Ingredients

  • 1 ¾ cup boiled lentils
  • 3 eggs, well-beaten
  • salt and pepper to taste
  • 2 tbsp water
  • boiling butter for frying

Method

  1. 1 Beat the eggs well and add 2 tablespoons of water.
  2. 2 Season with salt and pepper to taste.
  3. 3 Mix the cold boiled lentils into the egg mixture until smooth.
  4. 4 Fry the mixture in boiling butter as you would a standard omelet.
