Lemon Zest Sponge Cake

Ingredients

  • 100 g butter
  • 100 g sugar
  • 4 egg yolks
  • 3 tablespoons milk
  • lemon zest
  • 4 egg whites
  • 250 g flour
  • 1 packet baking powder

Method

  1. 1 Beat butter and sugar until fluffy. Add egg yolks, milk, and lemon zest, mixing well.
  2. 2 Whip egg whites to stiff peaks. Fold into the butter mixture along with the flour.
  3. 3 Sprinkle baking powder over the batter and gently fold it in until just combined.
  4. 4 Pour into a buttered pan and bake in a hot oven (425°F) for 30 minutes.
