Lemon White Wine Baked Haddock
Ingredients
- 1 whole haddock, cleaned
- 1 cup bread crumbs
- 1 tbsp chopped parsley
- 1 tbsp chopped sweet herbs
- 1 pinch nutmeg
- 1 pinch salt
- 1 pinch pepper
- 1 tbsp butter, divided
- 1 tsp grated lemon peel
- 1 egg yolk
- 2 tbsp white wine
- 2 tbsp water
- 1 pinch mace
Method
- 1 Clean the haddock and remove the gills. Mix bread crumbs, parsley, sweet herbs, nutmeg, salt, pepper, 1 tbsp butter, and lemon peel to create the stuffing.
- 2 Stuff the fish cavity with the mixture. Skewer the tail into the mouth and rub the outside well with the egg yolk.
- 3 Sprinkle remaining bread crumbs over the fish and dot with small bits of butter.
- 4 Place in a baking dish with white wine, water, mace, and lemon peel. Bake in a moderate oven (350°F) until cooked through.
- 5 Remove fish and skim the cooking juices. Serve with oyster, white fish, or anchovy sauce, mixing in the skimmed juices.
