Lemon White Wine Baked Haddock

Ingredients

  • 1 whole haddock, cleaned
  • 1 cup bread crumbs
  • 1 tbsp chopped parsley
  • 1 tbsp chopped sweet herbs
  • 1 pinch nutmeg
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tbsp butter, divided
  • 1 tsp grated lemon peel
  • 1 egg yolk
  • 2 tbsp white wine
  • 2 tbsp water
  • 1 pinch mace

Method

  1. 1 Clean the haddock and remove the gills. Mix bread crumbs, parsley, sweet herbs, nutmeg, salt, pepper, 1 tbsp butter, and lemon peel to create the stuffing.
  2. 2 Stuff the fish cavity with the mixture. Skewer the tail into the mouth and rub the outside well with the egg yolk.
  3. 3 Sprinkle remaining bread crumbs over the fish and dot with small bits of butter.
  4. 4 Place in a baking dish with white wine, water, mace, and lemon peel. Bake in a moderate oven (350°F) until cooked through.
  5. 5 Remove fish and skim the cooking juices. Serve with oyster, white fish, or anchovy sauce, mixing in the skimmed juices.
