Lemon Wheatmeal Shortbread

Ingredients

  • 1/2 lb castor sugar
  • 1/2 lb wheatmeal, sifted
  • Grated rind of 1 lemon
  • 2 oz butter
  • 2 eggs, well-beaten

Method

  1. 1 Rub the butter into the wheatmeal.
  2. 2 Mix in the sugar, lemon rind, and beaten eggs until well combined.
  3. 3 Roll the mixture out thin and lay it on a baking tin.
  4. 4 Bake until done, then cut into diamond squares.
