Lemon Wheatmeal Shortbread
Ingredients
- 1/2 lb castor sugar
- 1/2 lb wheatmeal, sifted
- Grated rind of 1 lemon
- 2 oz butter
- 2 eggs, well-beaten
Method
- 1 Rub the butter into the wheatmeal.
- 2 Mix in the sugar, lemon rind, and beaten eggs until well combined.
- 3 Roll the mixture out thin and lay it on a baking tin.
- 4 Bake until done, then cut into diamond squares.
