Lemon Walnut Coffee Cake
Ingredients
- 3/4 cup milk
- 1/2 cup melted Crisco
- 1/2 cake compressed yeast
- 1 teaspoon salt
- 2 eggs
- 1 cup sugar
- 1 teaspoon lemon extract
- 1/4 cup chopped English walnut meats
- Flour (as needed)
Method
- 1 Heat milk slightly and add flour to make a batter.
- 2 Dissolve yeast in a little lukewarm water and add to the batter.
- 3 Allow the mixture to rise until light.
- 4 Add melted Crisco, beaten eggs, sugar, lemon extract, and salt.
- 5 Add enough flour to make a stiff dough and knead for ten minutes.
- 6 Let the dough rise until light again.
- 7 Place in a greased pan and let rise a second time.
- 8 Spread with melted Crisco and sprinkle with sugar, cinnamon, and nuts.
- 9 Bake in a hot oven (425°F) for half an hour.
