Lemon Vanilla Layer Cake
Ingredients
- 1/2 cup butter
- 1 1/2 cups granulated sugar
- 1 cup lukewarm water
- 2 1/2 cups sifted flour
- 4 egg whites
- 1 lemon, juiced and grated
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
Method
- 1 Cream butter with sugar until light and fluffy.
- 2 Alternately add half the flour and the water, mixing well.
- 3 Fold in half the stiffly beaten egg whites, then the remaining flour.
- 4 Mix in lemon juice, rind, vanilla, and baking powder.
- 5 Fold in remaining egg whites, pour into a greased pan, and bake at 350°F for 45 minutes.
- 6 Cool completely and frost with white icing.
