Lemon Vanilla Layer Cake

Ingredients

  • 1/2 cup butter
  • 1 1/2 cups granulated sugar
  • 1 cup lukewarm water
  • 2 1/2 cups sifted flour
  • 4 egg whites
  • 1 lemon, juiced and grated
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder

Method

  1. 1 Cream butter with sugar until light and fluffy.
  2. 2 Alternately add half the flour and the water, mixing well.
  3. 3 Fold in half the stiffly beaten egg whites, then the remaining flour.
  4. 4 Mix in lemon juice, rind, vanilla, and baking powder.
  5. 5 Fold in remaining egg whites, pour into a greased pan, and bake at 350°F for 45 minutes.
  6. 6 Cool completely and frost with white icing.
