Lemon Vanilla Hard Candy
Ingredients
- 2 ½ cups sugar
- ½ cup water
- 1 tablespoon butter
- ½ teaspoon lemon juice
- 1 teaspoon vanilla extract
Method
- 1 Combine sugar and water in a saucepan. Stir until dissolved, then wash down sides of the pan with water.
- 2 Boil the mixture without stirring until it reaches the soft-ball stage.
- 3 Remove from heat and stir in butter and lemon juice. Return to heat and boil until it reaches the crack stage.
- 4 Remove from heat, stir in vanilla, and pour onto an oiled slab or tin to cool slightly.
- 5 Once cool enough to handle but still pliable, cut into squares.
