Lemon Syrup
Ingredients
- 1 pint fresh lemon juice
- 1¾ pounds lump sugar
- 1 ounce thin-cut lemon peel
Method
- 1 Combine lemon juice and sugar in a pot. Dissolve the sugar using gentle heat.
- 2 Add lemon peel and simmer gently for a few minutes. Skim until the surface is clear.
- 3 Strain the mixture through a flannel cloth while warm.
- 4 Once cold, bottle and cork tightly. Store in a cool place.
