Lemon Syrup

Ingredients

  • 1 pint fresh lemon juice
  • 1¾ pounds lump sugar
  • 1 ounce thin-cut lemon peel

Method

  1. 1 Combine lemon juice and sugar in a pot. Dissolve the sugar using gentle heat.
  2. 2 Add lemon peel and simmer gently for a few minutes. Skim until the surface is clear.
  3. 3 Strain the mixture through a flannel cloth while warm.
  4. 4 Once cold, bottle and cork tightly. Store in a cool place.
