Lemon Sweetened Barley Water
Ingredients
- 2 tablespoons pearl barley
- 2 quarts cold water
- Lemon juice and sugar or salt to taste (optional)
Method
- 1 Wash the barley and soak it in the cold water for several hours.
- 2 Boil the barley gently in the same water for 2 hours, or cook in a double boiler for 4 hours until reduced by half.
- 3 Add lemon juice and sugar or salt to taste if desired.
