Lemon Sweetened Barley Water

Ingredients

  • 2 tablespoons pearl barley
  • 2 quarts cold water
  • Lemon juice and sugar or salt to taste (optional)

Method

  1. 1 Wash the barley and soak it in the cold water for several hours.
  2. 2 Boil the barley gently in the same water for 2 hours, or cook in a double boiler for 4 hours until reduced by half.
  3. 3 Add lemon juice and sugar or salt to taste if desired.
