Lemon Sultana Cake With Candied Peel
Ingredients
- 10 oz flour
- ½ lb butter
- ½ lb castor sugar
- ½ lb sultana raisins
- 1 oz candied peel
- 2 eggs
- 1 tsp baking powder
- ¼ cup milk
- Grated rind of 1 lemon
Method
- 1 Rub the butter into the flour.
- 2 Add the sugar, sultana raisins, candied peel, baking powder, and lemon rind.
- 3 Mix with the milk and well-beaten egg yolks.
- 4 Beat the egg whites to stiff peaks and fold them in lightly.
- 5 Pour into a well-greased cake tin.
- 6 Bake for about 1 hour and 30 minutes.
