Lemon Sultana Cake With Candied Peel

  • 10 oz flour
  • ½ lb butter
  • ½ lb castor sugar
  • ½ lb sultana raisins
  • 1 oz candied peel
  • 2 eggs
  • 1 tsp baking powder
  • ¼ cup milk
  • Grated rind of 1 lemon

Method

  1. 1 Rub the butter into the flour.
  2. 2 Add the sugar, sultana raisins, candied peel, baking powder, and lemon rind.
  3. 3 Mix with the milk and well-beaten egg yolks.
  4. 4 Beat the egg whites to stiff peaks and fold them in lightly.
  5. 5 Pour into a well-greased cake tin.
  6. 6 Bake for about 1 hour and 30 minutes.
