Lemon Sponge Cake With Icing

  • 2 cups sugar
  • 6 eggs
  • 1 cup boiling water
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon lemon extract
  • 3 egg whites
  • 1 1/2 cups powdered sugar
  • lemon extract for icing

Method

  1. 1 Beat 3 egg yolks lightly, then add sugar and beat for 15 minutes.
  2. 2 Beat 3 egg whites to stiff peaks. Add yolks mixture, then the 3 beaten whites.
  3. 3 Stir in boiling water, lemon extract, and flour mixed with baking powder.
  4. 4 Divide batter into three layers and bake.
  5. 5 For icing, beat 3 egg whites to stiff froth, then mix in 1 1/2 cups powdered sugar and lemon extract.
  6. 6 Spread icing between cake layers.
