Lemon Sponge Cake With Icing
Ingredients
- 2 cups sugar
- 6 eggs
- 1 cup boiling water
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon lemon extract
- 3 egg whites
- 1 1/2 cups powdered sugar
- lemon extract for icing
Method
- 1 Beat 3 egg yolks lightly, then add sugar and beat for 15 minutes.
- 2 Beat 3 egg whites to stiff peaks. Add yolks mixture, then the 3 beaten whites.
- 3 Stir in boiling water, lemon extract, and flour mixed with baking powder.
- 4 Divide batter into three layers and bake.
- 5 For icing, beat 3 egg whites to stiff froth, then mix in 1 1/2 cups powdered sugar and lemon extract.
- 6 Spread icing between cake layers.
