Lemon Sponge Cake With Baking Powder
Ingredients
- 6 eggs, separated
- 1 ½ cups sugar
- 2 cups flour
- ½ cup cold water
- 1 teaspoon baking powder
- Juice and grated rind of 1 lemon
- ¼ teaspoon salt
Method
- 1 Preheat oven to 350°F. Grease and flour two loaf pans.
- 2 Beat egg yolks with sugar until pale and thick.
- 3 Mix flour, baking powder, and salt; stir into yolk mixture along with water and lemon zest/juice.
- 4 Beat egg whites until stiff peaks form, then gently fold into batter.
- 5 Divide batter between pans and bake for 30-35 minutes until golden and springy.
