Lemon Spice Pfeffernusse Cookies
Ingredients
- 3 eggs
- ½ lb powdered sugar
- 2 cups flour
- ½ tsp cinnamon
- ¼ tsp cloves
- ¼ tsp nutmeg
- ½ tsp soda
- ¼ tsp salt
- 1 lemon, juice and rind
Method
- 1 Beat eggs well, then gradually add powdered sugar, lemon juice, and grated rind.
- 2 Sift flour with salt, soda, and spices. Sift again and add to the egg mixture, beating until a smooth, medium-soft dough forms.
- 3 Chill the dough in the refrigerator for several hours.
- 4 Roll out on a floured board into long finger-shaped sticks, then cut into small marble-sized pieces.
- 5 Bake on greased baking sheets in a hot oven (425°F) until light golden brown.
