  • 3 ounces powdered sugar
  • 1/2 lemon, grated rind
  • 1 tablespoon lemon juice
  • 3 egg whites, beaten

Method

  1. 1 In a basin, stir together egg yolks, powdered sugar, and lemon rind until thick.
  2. 2 Slowly add lemon juice, then quickly fold in the beaten egg whites.
  3. 3 Pour into a pie dish and bake in a moderate oven (350°F) for 20 minutes.
