Lemon Souffle
Ingredients
- 3 egg yolks
- 3 ounces powdered sugar
- 1/2 lemon, grated rind
- 1 tablespoon lemon juice
- 3 egg whites, beaten
Method
- 1 In a basin, stir together egg yolks, powdered sugar, and lemon rind until thick.
- 2 Slowly add lemon juice, then quickly fold in the beaten egg whites.
- 3 Pour into a pie dish and bake in a moderate oven (350°F) for 20 minutes.
- 4 Serve immediately when the surface is golden brown.
